Celebrate Italian Heritage Month!

CHICOPEE, Mass. (Mass Appeal) - October is Italian Heritage Month and you can celebrate no matter what your background is.

Joe Frigo from Frigo's and Joe Pasternak, a co-president of the Italian Cultural Committee, John A. Odierna and Susan Lavoie are here to help us celebrate the Serviam Awards and Italian Heritage Month.

Beef Bracciole

Ingredients:

  • 2 lbs. beefsteak
  • 2 tbsps minced sweet pepper
  • 2 tbsps grated Romano cheese or Parmesan cheese
  • 3 tbsps minced parsley
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • ¾ tsp salt
  • 1 tsp black pepper
  • ¼ cup finely minced ham, salami or cooked sausage
  • ¼ cup olive oil
  • 3 cups tomato sauce

Directions:

  1. Spread the meat flat.
  2. Mix remaining ingredients, except oil and tomato sauce.
  3. Put a bit of the stuffing in the center of each piece and roll up and tie tightly with string at both ends and in the center.
  4. Heat oil in a large skilled and sauté meat until well browned on all sides.
  5. Add tomato sauce, cover and simmer slowly for 2 hours, or until meat is tender.
  6. Clip strings and serve in tomato sauce over pasta or rice.
