GREENFIELD, Mass. (Mass Appeal) - In our latest installment of the 'Meet The Mayors' series we're heading north to a city known for it's natural and architectural beauty. Mayor William Martin of Greenfield graced the kitchen and continued breakfast week with some pancakes that have a European flair.
GERMAN APPLE PANCAKES
½ cup all-purpose flour*
1 tbsp. sugar*
½ tsp. salt*
2 large eggs
2/3 cup half & half
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. lemon
2 tbsp. unsalted butter
1-1/4 pounds Granny Smith or Braeburn apples (3-4 large apple peeled, quartered, cored, and cut into 1/2”-thick slices)
¼ cup brown sugar
Confectioner’s sugar and maple syrup
Preparation:
-Place over rack in upper middle of oven; preheat to 500 degrees.
-Mix dry ingredients (*) in bowl.
-Mix eggs, half & half and vanilla.
-Add wet to dry; whisk 20 seconds.
-Melt butter in non-stick , oven-proofpan, 10” or 12”. Add apples, brown sugar and cinnamon. Cook apples 10” until golden brown. Take off heat and stir in lemon juice.
-Pour batter around edge of pan, then over apples. Place in oven and turn oven down to 425 degrees. Bake until edges are brown and puffy and edges have risen above edge of skillet, about 10”. Remove from oven.
-Loosen edges with spatula. Place plate over pan, invert pancake and dust well with powdered sugar. Serve with maple syrup.
