WEST SPRINGFIELD, Mass. (Mass Appeal) - At the Home Show this weekend, you'll see everything you need for your home, but you'll also be able to taste some great food! Brad Campbell, Executive Director of the Home Show and Nadim Kashouh, Owner of Nadim's Mediterranean Cuisine joined us to share more.

Simmered Lamb

Ingredients:

  • Lamb shank
  • Tomato
  • Onion
  • Garlic
  • Vegetable oil
  • Zucchini
  • Mushrooms
  • Celery
  • Carrots
  • Salt
  • Basil
  • All spice
  • Tomato paste
  • Bay leaves
  • Cinnamon stick.


Directions:

  1. Braise lamb shank, meanwhile, cut onions, carrots, and celery.  
  2. In separate pot, prepare sauce: add onions, garlic, carrots, celery. Sauté with oil till translucent.  
  3. Add diced tomatoes, water and bring to boil.  
  4. Add seasonings and sauce on top of braised lamb shank, then add zucchini, mushrooms and cover with foil.  
  5. Bake 350 2 ½ hours.
  6. Serve with rice, pasta, or mashed potatoes.
