Balsamic Steak with Quinoa & Grilled Tofu Salad

Ingredients:

  • 1 cup quinoa (uncooked)
  • 1 small red onion
  • 1 oz olive oil
  • 2 cup vegetable stock
  • 1/2 lemon juice & zest
  • 1 whole roasted red bell Pepper
  • 1/2 lb firm tofu
  • Pinch of sugar
  • Parsley
  • 1 lb flank steak
  • Balsamic vinaigrette


Balsamic Vinaigrette Recipe

Ingredients:

  • 3 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 minced garlic clove
  • ½ c olive oil
  • Salt & pepper
