Casa De Nana's Blackened Chicken Fajitas with a Tequila Lime Splash

SPRINGFIELD, Mass. (Mass Appeal) - Casa De Nana in Springfield has a mouth-watering menu of authentic Mexican cuisine and an atmosphere that takes you right to Mexico!

Owner Rob Ollari and Executive Chef Bill Sett showed us how to make Blackened Chicken Fajitas with a Tequila Lime Splash and some margaritas!

Blackened Chicken Fajitas with a Tequila Lime Splash

Ingredients:

  • 4 Skinless/ Boneless Chicken Breast
  • 1/2 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 2 Tbsp Garlic Powder
  • 1 Tbsp Oregano
  • 1 TEASPOON White Pepper
  • Casa De Nana Blackened Seasoning
  • 1 Tomatoes cut in wedges
  • 1/2 Onions cut in slices
  • 1 Bell Pepper cut in slices
  • 1/2 oz of Tequila
  • dash of lime juice
  • 8-12 tortillas
  • 1/2 sour cream
  • 1/2 Guacamole
  • Pico De Gallo

Directions:

  1. Combine chicken, oil, vinegar, and spices in a bowl and mix well until the chicken is covered. Refrigerate up 4 - 24 hours.
  2. Place a cast iron skillet over your gas or electric burner (gas stoves work best) for 10 minutes.
  3. Coat the chicken breast with the blackened seasoning removing excess spice and saute in a fry pan with butter over medium heat until the chicken is fully cooked.
  4. Carefully remove the skillet and add your onions, peppers, and tomatoes onto the hot skillet.
  5. lice each chicken breast into 4 pieces and place over veggies.
  6. Drizzle with the tequila lime and serve with warm tortillas, guacamole, and sour cream.
  7. Serve and enjoy!

In 1968, the founder of Pepe Taco traveled to the tip of California in search of the finest Mexican cuisine to bring back to Western Massachusetts. As the Springfield area's first Mexican restaurant, Pepe Taco brought spice and zest to the area. In 1970, the restaurant's name was changed from Pepe Taco to Nana's Kitchen. In 1984, the name was changed to Casa De Nana, "House of Grandmother", tribute to one of the restaurant's original founders. At Casa De Nana, we continue to pride ourselves, using only the freshest ingredients in all of our recipes, which are the original since 1968.

Rob began working in the business 23 years ago. He once owned a deli in Wilbraham. He has been at Casa de Nana since 1990. He purchased the business from the original owners who taught him all the ropes. He continues to manage and bartend at Casa, offering very comical conversation nightly.

Pete started at Casa de Nana in 1995 and has become an intricate part of our restaurant team. His restaurant experience originates in California back in the 1980's. He manages and bartends at Casa and is famously known for his Margarita mixing.
