Chandler's Cider Braised Pork Belly

SOUTH DEERFIELD, Mass. (Mass Appeal) - Official Mass Appeal Chef Greg Monette from Chandler's Restaurant in South Deerfield showed us how to make a delicious pork belly sandwich!

Chandler's Cider Braised Pork Belly Sandwich

Ingredients:

  • 1½ lbs pork belly
  • 1 tbsp cinnamon
  • 1 tsp salt and pepper
  • ¼ cup canola oil
  • 1 stalk celery, chopped
  • 1/2 small onion, chopped
  • 1 small carrot, chopped
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 2 tsp black peppercorns
  • ¼ c red wine
  • 1 cup apple cider
  • ½ cup veal stock
  • ¼ cup red wine vinegar
  • Salt to taste
     

Directions:

  1. Rub pork belly with spices, sear fat side in ¼ cup oil, add remaining ingredients and simmer, covered loosely with aluminum foil or lid, until meat is just tender, but not falling apart.
  2. Remove pork belly from liquid and sear fat side until crispy. Slice or cut slabs for sandwiches, dice and toss into stir fry or poach an egg and enjoy.
  3. Sandwich ideas: pickled onions or vegetables and honey mustard, soft cheese; sauerkraut, swiss cheese and spicy mustard or Russian dressing; fried egg, spinach and roasted red peppers.
