Chandler's Local Strawberry and Peach Sorbets

SOUTH DEERFIELD, Mass. (Mass Appeal) - If your sweet tooth is craving something refreshing and light, then fresh fruit sorbets made with local ingredients may just be what you're looking for! Official Mass Appeal Chef Greg Monette joined us in the kitchen to show us how to make strawberry and peach sorbets.

Local Strawberry and Peach Sorbets

Ingredients:

  • 5 large peaches or 1 quart strawberries
  • 2 cups sugar
  • 1 1/2 cups water
  • For peach sorbet add one inch cubes of fresh ginger to sugar and water

Directions

  1. Heat the water and sugar in a medium saucepan over medium low heat. 
  2. Stir constantly until all sugar is dissolved. 
  3. Raise the heat to medium until the syrup boils. Don't stir the syrup while it's boiling or crystals could form.
  4. Once it boils and becomes clear, remove from heat. 
  5. Let the syrup cool for at least 30 minutes.
  6. For peach sorbet, the longer you let it steep the stronger the ginger flavor will be so you can play with it.
  7. Add strawberries to blender or slice peaches into chunks and puree them in a blender.  Refrigerate to chill for at least an hour (less if you pre-chilled the fruit).
  8. Add one cup of the syrup to the fruit puree. Depending on the sweetness of the fruit you may need to add a little more or a little less. Make sure to taste it as you go along.  You don't want to make it too sweet.  Mix well.
  9. Process in an ice cream machine and freeze overnight.
  10. Enjoy!

Greg's Tip: Save your extra ginger flavored syrup to make a sweet and light vinaigrette to go over salad, fish or pork.
