Chicken or Fish En Papillote

CHICOPEE, Mass. (Mass Appeal) - Spring is just around the corner so why not make a healthy and delicious meal for your family? Local chef Ralph Webb joined us show us how to make some chicken en papillote!

Chicken En Papillote (in a paper bag)

Ingredients:

  • 4oz chicken cut thin
  • 1-2oz julienne vegetables
  • Carrots, onions, celery, assorted peppers
  • 1/2 ounce butter
  • 1/2 ounce white wine
  • Seasonings


Directions:

  1. Cut parchment paper in heart shape.
  2. Cut the chicken or pound thin.
  3. Prepare the vegetables by cleaning and cutting into julienne strips.
  4. Lay out on the parchment paper on one half of the heart place then place 4-6 ounces assorted vegetables, white wine and seasonings.
  5. Starting at the point of the heart fold over 1/8 inch of the paper, continue folding over about every 1/2 inch until the whole heart is sealed.
  6. Butter the outside of the top of the bag to help brown.
  7. Cook in 400 degree oven for about 10-15 minutes or until the bag browns and expands.
