Family style dinners: Baked chicken parmesan

CHICOPEE, Mass. (Mass Appeal) - Between work, running around for the kids, and keeping the house clean, cooking a family dinner each and every night isn't always easy to accomplish. In our family style dinners series you will never have to stress about what is on the table for dinner.

Bill Collins is a personal chef and he showed us how to make an easy and delicious baked chicken parmesan.

Baked Chicken Parmesan
Makes four servings

Ingredients:

  • 4 boneless chicken breasts halves, skinless and boneless
  • 2 egg whites (or 1 egg)
  • 2 tablespoons olive oil
  • 3/4 cup bread crumbs
  • 2 tablespoons parmesan cheese
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • salt and pepper to taste
  • 1/2 cup grated mozzarella Cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups prepared tomato sauce

Directions:

  1. Preheat the oven to 450°. Lightly coat a baking sheet with olive oil or olive oil flavored cooking spray.
  2. Blend egg white and oil. Combine bread crumbs, 2 tablespoons parmesan cheese, oregano, basil, and salt and pepper.
  3. Dip chicken into egg mixture. Then, coat it lightly with the bread crumb mixture.
  4. Place it in the baking dish, and bake it for 8-10 minutes, or until golden brown and crisp. If the chicken is thick, bake it longer, until it is cooked. Do not turn chicken.
  5. Remove chicken and ladle tomato sauce over it, and layer with mozzarella cheese and parmesan. Return it to the oven for another 5 minutes, or until the cheese is melted.
