SPRINGFIELD, Mass. (Mass Appeal) - We're outside at the grill because, why else? It's summertime! Friday we made a fruity fish recipe with Dee Lemieux, Owner of Pea Soup Catering .
Grilled Swordfish with Grilled Pineapple and Mango Salsa Recipe
- 1 lb swordfish
- 1/2 fresh pineapple
- 1 fresh mango peeled & diced
- 3 limes
- 1 small medium jalapeño
- Fresh cilantro
- 3 or 4 large mint leaves
Marinade
- 1/2 cup fresh cilantro
- 1/3 cup fresh mint
- Juice of 1 lime
- 2 to 3 tablespoons olive oil
