Hamentashen cookies for Purim!

SPRINGFIELD, Mass. (Mass Appeal - This Sunday the entire Jewish community will be celebrating Purim, but it wouldn't be Purim without the traditional hamantaschen cookies! Jeff Rembrant from the Jewish Community Center in Springfield, joined us in the Mass Appeal kitchen to show us how to make these delicious triangle-shaped cookies!

Hamentashen Recipe

Ingredients:

  • 1 c butter flavored shortening            
  • 1 tsp lemon extract
  • 1 ¼ c sugar                                         
  • 1 tsp almond extract
  • 6 eggs                                                 
  • 5 c flour
  • 1 tsp vanilla                                          
  • 4 tsp baking powder

 
Directions:

  1. Cream shortening and sugar well.
  2. Add eggs one at a time.  
  3. Add the extracts and fold in the flour and baking powder.  
  4. Chill dough, overnight is best.  
  5. Roll out dough a small piece at a time.  
  6. Cut out rounds with a cookie cutter/ or the lip of a juice glass.  
  7. Put a small amount of filling in the middle of each round and shape into three corners.  
  8. Bake in a preheated oven at 350° for 25-30 minutes. or until golden brown

 
Traditional Fillings:
Prune, Apricot, Raspberry, or Poppy seed pie fillings or fresh fruit puree.  Can be made will chocolate chips as well.
