Harvest Salad with Ann Macey

CHICOPEE, Mass. (Mass Appeal) - Everyone wants to know how they can use their Thanksgiving leftovers without getting bored with the same old recipe.

Ann Macey from Ann's Table for Two shared a recipe for a simple Harvest Salad that you won't get tired of!

Chilled Harvest Salad

Ingredients:

  • 4 T. Balsamic vinaigrette
  • 4 - 6 oz. cooked turkey meat
  • 6 C. torn lettuce
  • 2 T. chopped scallions
  • 1 plum tomato, diced
  • 1/3 C. frozen yellow corn
  • 1/4 C. crumbled Feta cheese
  • 3 T. dried cranberries
  • 1/4 C. chopped pecans
  • 3 strips cooked bacon, very crisp and crumbled

Directions:
Toss all ingredients in a large bowl, divide into two dinner plates and serve immediately.  Yield: 2 servings.

NOTES: You may substitute corn from a can but frozen corn has a fresher flavor.  There is no need to cook the corn.  Romaine lettuce is recommended for this salad.  One-half cup of grape tomatoes, cut in half, can be used rather than a plum tomato.
