CHICOPEE, Mass. (Mass Appeal) - Packing lunches for your kids can be sometimes tricky because kids can be hard to please. Liz Corbett, the Party Hostess Diva, showed us how to make some fun and healthy snacks they will love!
Baked Tortilla Chips
Ingredients:
8" round tortillas, white or whole grain
Olive oil to brush on
Sea salt to season
Optional :lime juice, 1 TBSP
Directions:
Lay the tortilla on a cutting board or baking stone if you have one and brush lightly with olive oil.
Sprinkle to your liking with sea salt. The courser grains of the sea salt are a must for this.
With a pizza cutter cut the round in half, and half again till you have 4 wedges. Then each of those get cut in half, like a pie . You will have 8 wedges.
Separate them slightly from each other so they will bake evenly.
Protein Snack Bites
Ingredients:
1 cup dry quick oats, or old fashioned
½ cup natural peanut butter (or sub. sunflower butter for nut allergies)
1/3 cup honey
1 cup flaked coconut
½ cup ground flaxseed (I recommend Hodgson Mills)
1 generous scoop (approx. 1/8 cup) of vanilla whey protein powder, any brand
1 tsp. vanilla
Directions:
Combine all ingredients well, scoop and roll into small balls (smaller than ping pong), chill and enjoy!
One serving is 3 balls.
Pair with fresh fruit like apple slices for a high protein satisfying energy snack.
