Healthy Taco Dinner
4- 6 portions
- 1 pound ground turkey
- Taco seasoning
- Hot pepper sauce
- Salt and pepper to taste
- 8-10 Soft corn tortillas
- 8 ounces of fresh salsa
- 4-6 each scallions cut in small pieces
- Red and green peppers cut in small strips
- Grated cheddar or jack cheese
- Guacamole to your taste
- 4-8 ounces of small diced tomatoes
- 2-4 ounces of shredded lettuce
- Sour cream
Directions
- Sauté the ground turkey season with taco seasoning, hot pepper sauce, salt and pepper to taste set aside. In the same pan cook the peppers until soft put them aside.
- In a two quart casserole dish spray with cooking oil line with soft tortillas then layer the meat, salsa, peppers between the soft tortillas finish on top layer of cheese. Bake in a 350 oven until cheese is melted and bubbly.
- Serve with guacamole, sour cream, diced tomatoes, lettuces, and scallions.
Healthy Deconstructed Ground Turkey Dinner
4- 6 portions
- 1 pound ground turkey
- 1 pound of potatoes cut in 14 inch strips
- 1/2 ounce of chili powder
- ½ of Worcestershire sauce
- 4-6 ounces of graded cheddar or American cheese
- 1-2 ounces of ketchup
- Salt and pepper to taste
Directions:
- Preheat oven to 450 degrees, cut the potatoes and place them in cold water when done drain and dry place on a sheet pan that has been sprayed with cooking spray, spray the potatoes and season with salt.
- Place in the oven turn after 10-15 minutes until golden brown. In a sauté pan cook the turkey and season with chili powder and Worcestershire sauce add ketchup.
- In a two quart casserole place the potatoes then the cooked seasoned meat mixture top with cheese and bake in a 350 degree oven until the cheese melts and bubbles.
Alternative
On top off the cheese you can place biscuit dough and bake until the biscuits are done.
