Laura Hutchinson's Banana Bread

CHICOPEE, Mass. (Mass Appeal) - Every Monday some familiar faces from 22News will be sharing their favorite recipes with you!

22News Anchor Laura Hutchinson joined Seth and Ashley in the Mass Appeal kitchen to bake up her delicious banana bread recipe.

Laura Hutchinson's Banana Bread

Ingredients:

  • 1 cup sugar
  • 3 ripe bananas
  • 2 eggs (beaten)
  • 1/4 cup oil (canola, corn or veg, not olive)
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 - 1 cup chopped nuts (optional)
  • 1/2 cup baking chocolate


Directions:

  1. Mash bananas with a fork
  2. Add sugar, eggs, oil, beat until smooth
  3. Add flour (sifted with baking soda and salt) and nuts
  4. Pour into a loaf pan
  5. Sprinkle with chocolate shavings
  6. Bake at 350 degrees for 1 hour
  7. Let it cool completely on a rack before cutting

Laura's tip:
Always test the center with a knife to make sure it comes out clean.
