Lobster and fried green tomato BLT

NORTHAMPTON, Mass. (Mass Appeal) - Governer Deval Patrick has declared August 22nd through August 28th Massachusetts Farmers Market Week!

In celebration, Chef Jacob Perkins from Eastside Grill in Northampton will be making a delicious recipe using fresh, local ingredients!

1 1½# Lobster, steamed, chilled, meat removed from shell and diced.

Dressing:

  • 2/3 cup mayo
  • ¼ cup sour cream
  • 2 Tbs minced shallot
  • 2 Tbs pickle relish
  • 1 Tbs tomato paste
  • Juice from 2 wedges of lemon
  • 2 dashes Tabasco
  • ½ tsp Diced chipotle pepper in adobo sauce dash black pepper
  • 1 ½ tsp Old Bay seasoning
  • 1 Tbs chopped parsley

Mix together until well blended.

  • 8 Strips thick sliced smoked Bacon
  • 8 Slices green tomato (1/8 thick, from two medium to large tomatoes)
  • 1 cup flour
  • 2 eggs
  • ½ cup milk
  • 4 cups panko (Japanese Breadcrumb)


Combine lobster meat with just enough dressing to coat liberally and set aside.

Whisk together eggs and milk in a small mixing bowl. Place flour and panko in their own bowls and working in batches, bread tomato slices. Dip in flour, then egg mix, then coat with panko In a large skillet, cook bacon over medium heat until crispy and place on a paper towel to dry. Reserve bacon fat to fry tomatoes.

Fry tomatoes in skillet with bacon fat (you may need to add a little oil to the pan as you get along in the process) until golden brown on both sides.

To assemble: One slice of fried tomato on the bottom, leaf of lettuce, spoonful of lobster salad, two slices of bacon, slice of fried tomato and garnish with excess dressing.
