Nick Bannin's Chicken Tarragon

CHICOPEE, Mass. (Mass Appeal) - Every Monday some familiar faces from 22News will be sharing their favorite recipes with you!

22News Storm Team Meteorologist Nick Bannin joined Seth and Ashley in the Mass Appeal kitchen to cook up his delicious recipe for Chicken Tarragon.


Nick Bannin's Chicken Tarragon

Ingredients:

  1. 2 Chicken Breasts
  2. 2 tbsp olive oil
  3. 1 medium onion chopped
  4. 1 garlic clove, crushed
  5. 4-6 oz mushrooms sliced
  6. 1/2 cup Brandy
  7. 1 chicken bouillon cube
  8. 2 tbsp dried tarragon
  9. 1 cup heavy cream

Directions:

  1. Cube chicken breasts.
  2. Warm oil & gently cook onions and mushrooms until cooked & slightly brown.
  3. Add crushed garlic & cook for a further minute. Do not brown or garlic will taste bitter.
  4. Remove from pan.
  5. Add chicken & cook until golden brown & nearly cooked through 10-15 mins.
  6. Add onion mixture back into saute pan. Off heat, add brandy. Put back on heat & when warmed through, ignite with a match & shake sauté pan until all brandy & has evaporated off & flame died down.
  7. Add cream & bouillon cube. Heat cream through & when slightly thickened, add tarragon, salt & pepper. Taste.
  8. Serve with rice.

Nick's Tip: Add more tarragon if you want!
