Peanut Noodles

NORTHAMPTON, Mass. (Mass Appeal) - It's hot outside, and so the last thing you want to do it raise the temp inside the house when you're making a meal.  Daniel Martinez is the owner of Grub Sandwiches in Northampton showed us how to make peanut noodles.

Peanut Noodles

Ingredients:

  • 4 portions of spaghetti or udon
  • 1 1/2 C peanut butter (room temperature), smooth is better but not necessary
  • 1/2 C soy sauce
  • 2 T brown sugar
  • 2T sesame oil
  • 1/4 C Rice wine vinegar
  • 1” slice fresh ginger
  • 2 cloves garlic, minced
  • ¼ C orange juice
  • 2 T chili flakes
  • 2 T sesame seeds, toasted
  • Cilantro, as needed
  • Pickled vegetables, as needed

Directions:

  1. Heat oil over moderate-high heat and add garlic and ginger. Cook until fragrant.
  2. Add vinegar, sugar, soy, OJ, ginger, and sesame oil. Cook for one minute, then add peanut butter.
  3. Remove from heat and whisk until smooth and combined.
  4. Cook noodles until just past ‘al dente’, strain and rinse with cold water.
  5. Stir noodles into peanut sauce, top with cilantro, sesame seeds and chili flakes. Serve along side pickled vegetables.
