CHICOPEE, Mass. (Mass Appeal) - Sam Kochan, Tom Walsh and Greg Long from Mission Cantina in Amherst showed us how to make a delicious Mexican fish dish and some tasty margaritas.
Seared Grouper Veracruz Style
2 ea 6-8 oz grouper fillets or snapper
1 cup chopped tomatoes
1/2 Spanish onion diced
4 cloves garlic minced
1/4 cup sliced spanish olives
2 small jalapenos diced
2 table spoons capers
Chopped fresh cilantro to taste
Mexican oregano to taste
Olive oil
Limes to garnish
