Coriander Rice

• 1/2 c. olive oil
• 1 1/2 c. minced shallots
• 3 tbsp. ground coriander
• 3/4 tbsp. turmeric
• 4 1/2 cups basmati rice
• 9 cups chicken broth
• 3 tsp. salt
• 1/2 cups parsley

Raspberry White Wine Gravy

• 20 oz. chicken broth
• 4 oz. white wine
• 2 tbsp. all-purpose flour
• 4 tbsp. vegetable
• 1 pint fresh raspberries

Raspberry Brulee Grilled Chicken

• 1 c. raspberry vinaigrette
• 1 tbsp. minced fresh rosemary
• 8-6 oz. chicken b&s breast
• 1/2 c. seedless raspberry jam
• 1 1/2 tsp. lime juice
• 1/2 tsp. soy sauce
• 1/8 tsp. garlic powder
