Shannon Halligan's Panko Crusted Salmon

CHICOPEE, Mass. (Mass Appeal) - Every Monday some familiar faces from 22News will be sharing their favorite recipes with you!

22News Anchor Shannon Halligan joined Seth and Ashley in the Mass Appeal kitchen to cook up her delicious recipe for panko crusted salmon.

Shannon Halligan's Salmon

Ingredients:

  • 6oz Salmon
  • Panko Bread Crumbs
  • 1 Egg
  • Canola oil
  • Salt and pepper
  • Mayonnaise
  • Soy Sauce

Directions:

  1. In a bowl, beat the egg.
  2. In another bowl, pour in panko bread crumbs.
  3. Dip salmon in egg wash then coat with bread crumbs.
  4. Fry the salmon in a pan until golden brown.
  5. Serve with rice and your favorite seasonal vegetable.
  6. Mix equal parts of mayonnaise and soy sauce to make a dipping sauce.
  7. Enjoy!
     

Shannon's Tip: Make sure your pan isn't too hot or your crust will burn!
