Stuffed Hamburgers and Chickpea and Black Bean Salad

CHICOPEE, Mass. (Mass Appeal) - Seth and Ashley cooked up two delicious recipes that will help you stand out at your 4th of July barbecue.

With his take on the classic hamburger, Seth showed us how you can make your burgers the star of the show with his recipe for stuffed hamburgers.

Meanwhile Ashley whips up Mass Appeal Producer Michelle's favorite black bean salad.

Seth's Stuffed Hamburgers

Ingredients:

  • 1 lb ground beef
  • 1/4 C. onions, chopped
  • 1/4 C. shredded cheddar cheese
  • 1/4 C. diced red peppers
  • 1/4 C. spinach, raw
  • 2 Tbsp spice blend (Seth uses; breadcrumbs, garlic, salt, pepper, cayenne pepper, dried parsley)
  • 1 Tbsp red wine vinegar

Directions:

  1. Combine all ingredients, mix well.
  2. Form into hamburger patties.
  3. Cook on a grill, broiler, or saute pan and cook the hamburgers for 3 to 5 minutes on each side until almost done.
  4. Allow the hamburgers to rest for 5 minutes and serve immediately on buns.
  5. Enjoy!


Black Bean Salad

Ingredients:

  • 1 can black beans
  • 1 can chickpeas
  • 2 raw corn on the cobs
  • 1/2 red onion, chopped
  • 1 can heart of palm, sliced
  • 1 red pepper, diced
  • 1- 2 Tbsp olive oil
  • 2-3 Tbsp Red wine vinegar
  • Salt & Pepper
  • 1 Tsp fresh dill (optional)

Directions:

  1. Rinse black beans and chickpeas under water, pat dry with a paper towel, place in a bowl.
  2. Cut corn off the cob, add to beans and chickpeas.
  3. Combine all remaining ingredients and place in refrigerator for 1 hour before serving.
  4. Enjoy!
