CHICOPEE, Mass. (Mass Appeal) - Now's the time of year to utilize those fresh veggies from your garden! Kathleen Delaney, owner of Great Grapes Catering, showed us how to make some healthy vegetable dishes; quinoa stuffed tomatoes, eggplant rollatini, ratatouille!
Cheese Filling for Vegetable Rollatini
- 1/2 Cup Ricotta
- 2 Tbsp Goat Cheese
- 1 Tbsp Fresh Basil
- 1 Tbsp Fresh Oregano
- 1 Cup Fresh Spinach
- 1 Egg
- Salt and Pepper
- Bake at 350 degrees for 10 minutes!
- Spread on grilled vegetables and enjoy!
