Christmas Turkey Pinwheels
– 2 zucchini, sliced into planks
– 2 yellow squash. Sliced into planks
– 3 jalapenos
– 2 red peppers
– 1 large onion
– 1 pound of sliced turkey breast
– 4 tortilla wraps (2 spinach & 2 sun dried tomato)
– 8 ounces of Boursin cheese
– 48 Frilled Tooth Picks
1.) Preheat oven to 425
2.) Cut zucchini and yellow squash into long thing planks. Seed the jalapenos. Julienne the jalapenos, red pepper and the onions. Brush with oil, season with salt, pepper, and garlic.
3.) Place on a sheet pan and cook in preheated oven for 25 minutes.
4.) Lay out tortillas and spread on Boursin cheese leaving one inch from the side empty. Place roasted veggies and turkey and roll up.
5.) Place the Frilled tooth picks 1 centimeter apart, cut, and plate.

– 2 pounds (12-15 count) shrimp
– 1 quart of boiling water
– ½ tbls parsley
– ½ tbls thyme
– 1 bay leaf
– ½ tbls lemon juice
– ½ tsp kosher salt
– ½ tsp ground black pepper
For the Sauce:
– ½ cup chili sauce
– ½ cup ketchup
– 3 tbls horse radish
– 2 tsp freshly squeezed lemon juice
– ½ tsp Worcestershire sauce
– ¼ tsp hot sauce
1.) Put 10 cups (I quart), salt, pepper, lemon, parsley, and bay leaf to a large sauce pan and bring to a boil over medium/high heat.
2.) Peel and de-vein the shrimp, leaving tails on (you can purchase peeled and de-veined, tail on shrimp). Drop shrimp into liquid and turn the heat off. Cook shrimp stirring occasionally until they turn pink, about 2-2 ½ minutes for medium shrimp and 3 minutes for large. Drain and cool at room temp or shock with cold water and ice.
3.) For the sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Serve as a dip with the shrimp.
