Blueberry lemonade and blueberry yogurt parfait

Annie Lytle-Rich of Shelburn Falls Coffee Roasters shows us how to make blueberry lemonade and blueberry yogurt parfaits.

Blueberry lemonade:
    2 cups fresh blueberries (local if you have them!)
    3/4 cup granulated sugar
    2/3 cup freshly squeezed lemon juice
    4 cups cold water divided

Place blueberries, sugar, and 2 cups of the water into a blender and blend until smooth. If you would like to take the blueberry skins out, you can pour the mixture through a fine mesh strainer. Pour into a pitcher and add lemon juice. Add the two remaining cups of water and serve over ice with a lemon slice garnish! 

Blueberry Yogurt Parfait:

    ½ cup blueberries (2 tablespoons set aside) 
    1 tablespoon powdered sugar
    1 cup plain greek yogurt
    ½ cup granola
Place 2 tablespoons of blueberries and the sugar in a microwave safe bowl and heat on high in microwave for 1 minute. 

Let rest for 30 seconds, then add to Greek yogurt and stir vigorously. Layer yogurt and granola and top with the remaining blueberries. Enjoy!
