Bailey’s Brownie Cheesecake Cups
Oven temp: 350 degrees
Bake time: 25-27 min.
Cooking spray, for cupcake tins
1 or 2 Cupcake tins
2 mixing bowls
1 box brownie mix, plus ingredients called for on box
8 oz. cream cheese, softened
4 tbsp. mini semisweet chocolate chips, MELTED, PLUS more chips for garnish
4 tbsp. Baileys Irish Cream
8 oz. whipped topping
Make the brownies per your regular recipe or following the directions on the brownie mix box
Upon removing from the oven, immediately press the shot glass into the center of each brownie creating s “bowl”.
Bailey’s cheesecake filling:*
– in a mixing bowl, combine:
Bailey’s Irish Cream
– Beat until smooth
– With a spatula, fold in whipped topping
– Spoon filling into the brownies when cool and refrigerate until serving.
if you have extra filling left, put it into small clear bowls, top with mini chocolate chips or chopped mint candies and serve as parfaits.
