Winter squash and Hearty Grain Salad

1 small winter squash
1 shallot
1/4 cup whole grain rice (prepared)
1/4 wheat berries (prepared)
1/2 cup brown rice (prepared)
1/8 cup of chopped hickory nuts or pecans
Avacado Oil
Salt
Pepper
Parsley
