(Mass Appeal) – Seth is on the Paleo Diet this week, and Auntie Cathie, Owner and Chef of Auntie Cathie’s Kitchen in West Springfield, shows us how to make a delicious meal that follows the Paleo Diet plan. We learned how to make Cinnamon Coconut Pancakes and Poached Pears.Paleo Pancakes (Cinnamon Coconut Pancakes)

2 large eggs

3 T full fat coconut milk

1/2 mashed ripe banana (about 2 T)

1/2 t apple cider vinegar

1/2 t vanilla extract

1 1/2 T organic coconut flour

1/2 t cinnamon

1/4 t baking soda

1 pinch salt

ghee or coconut oil (for frying)

Whisk together eggs, coconut milk, and banana.

Add apple cider vinegar, vanilla, coconut flour, cinnamon, baking soda, and salt and whisk to combine.

Fry batter on skillet or griddle.Poached Pears

3 cups fresh squeezed orange juice

3 cups water

2 inch piece of ginger, peeled

4 ripe but not mushy pears

5 whole cloves

1 stick cinnamon

parchment paper cut to fit the saucepan you’re using

zest of 1 orange

Combine orange juice, water, ginger, cloves, and cinnamon in saucepan.

Add peeled pears and cover with parchment paper.

Boil for 30 minutes.
