Simple orange basil chicken marinade

Roger Frigon, chef at Atkins Farms, showed us how to make an easy orange basil chicken recipe that’s easy to freeze for later.


6 5-6oz Boneless Skinless Chicken Breasts
¼ Cup Orange Juice
2 Tablespoons Honey
3 Tablespoons Canola Oil
2 Teaspoons  dried Parsley
½ Teaspoon Dried Basil
½ Teaspoon Orange Zest
½ Teaspoon Sea Salt
¼ Teaspoon Black Pepper


Combine Marinade ingredients in a bowl.  Mix thoroughly.  
Place Chicken Breasts in a Re-sealable bag
Pour marinade into bag with chicken.  Massage gently 
to coat chicken.  Let marinate for 2-3 hours or overnight.
Warm a Large Skillet over Med-High heat.  Spray pan with cooking 
Spray.  Carefully place Chicken breasts in the pan. Cook on each side for
5-7 minutes, until browned,  Place Reserved Marinade in a small pan and 
bring to a boil.  Boil for 3-5 minutes until reduced by half.  Pour over chicken 
in skillet and simmer until chicken is done and juices run clear 
If freezing:  Label bag with Contents and date.  File recipe for 
cooking instructions.  Freeze and defrost when needed.
