Ingredients:

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder, sifted

6 tablespoons (3/4 stick) unsalted butter, at room temperature

1/2 cup granulated sugar

1/3 cup firmly packed light brown sugar

1 large egg

1 teaspoon vanilla extract

3/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup buttermilk

2/3 cup roughly crumbled graham crackers, plus more for decorating

2/3 cup mini marshmallows, plus more for decorating

10 ounces semi-sweet chocolate chips

3/4 cup heavy cream

Cooking Directions:

Preheat the oven to 350 degrees. Line 18 muffin or cupcake tins. In a medium bowl whisk together the flour and the cocoa.

In another bowl, using an electric mixer, beat the butter and the sugars on medium-high speed until fluffy. Add the egg and the vanilla and beat until combined. Stir in the baking soda and the salt.

Add the flour mixture and the buttermilk alternately, beginning and ending with the flour, stirring well after each addition. Using a rubber spatula, stir in the graham crackers and marshmallows.

Divide the batter evenly among the prepared muffin cups; each cup should hold about 2 tablespoons of batter. Bake until a toothpick inserted into the center of a cupcake comes out clean, about 18 to 20 minutes. Remove the pans from the oven and set them on wire racks. Let the cupcakes cool for 10 minutes; then transfer them to the racks. Let cool.

Next, make the ganache for the topping. Place the chocolate chunks in a heatproof bowl. In a small saucepan bring the cream to a boil. Remove it from the heat, and pour it over the chocolate. Whisk the mixture together to form a glossy ganache.

Let the ganache cool for a few minutes (you may do this in the refrigerator); then spoon a bit of it over the top of each cupcake. (You may have leftover ganache.) Top with graham-cracker crumbs and mini marshmallows.
