CHICOPEE, Mass. (Mass Appeal)  You can use herbs for so much more than cooking!  Carol Joyce is the Owner of White Buffalo Herbs in Warwick showed us how to use FENNEL in cooking & cosmetics. To follow our series on Herbs ‘A to Z’ click here.

FENNEL Bulb Slaw

  • 1 bulb fennel
  • 3 apples
  • ¼ c. lemon juice
  • 1 T horseradish OR 1 T fresh chopped mint & ½ tsp mustard
  • 1 T olive oil
  • 1 tsp honey or agave
  • ¼ tsp salt
  • ¼ tsp pepper

Directions

  • 1. Remove fronds & save for garnish
  • 2. Slice fennel bulb thinly
  • 3. Peel & slice apples thinly
  • 4.Put in pretty bowl
  • 5. Make dressing (mix remaining ingredients in blender or glass shaker jar)
  • 5. Pour dressing over veggies & stir.
  • 6. Garnish with fronds
  • serves 4 (The horseradish makes it spicy or the mint makes it sweeter)

Easy Spaghetti Sauce

  • 1 large can diced tomatoes
  • 1 tbsp Daily Dash
  • 1 teaspoon FENNEL seeds
  • ½ tsp. natural sugar
  • 1 bulb garlic chopped
  • 1 onion, chopped
  • 2 Tbsp Olive Oil
  • 1-2 pats Butter

Directions

  • 1. Put all ingredients (except butter) in a large sauté pan.
  • 2. Simmer (Stirring often for 20 minutes.
  • 3. Increase heat, briefly & add butter .
  • 4. Stir until sauce is thickened (1-2 min)
  • 5. Serve over favorite pasta or spaghetti squash.

FENNEL Seed Facial Toner

  • 1 teaspoons fennel seed
  • 1 water
  • 2 drops Lavender Essential Oil

Directions

  • 1.Put seed in a stainless saucepan.
  • 2. Pour water over & bring to a boil.
  • 3. Reduce to a simmer & simmer for 20 minutes.
  • 4. Cool & strain.
  • 5. Add essential oil & put in a spray bottle.
  • Keep in fridge up to 4 days & spray skin, as a toner.
  • Dab cooled tea on skin to help reduce puffiness & wrinkles.
  • 2. Avoid getting in eyes.
  • Use after making a cup of tea (drink tea & use a small amount for skin)
  • Said to shrink large pores, too.

FENNEL Hair Strengthener

  • 1 teaspoons fennel seed
  • 1 water
  • 2 drops Rosemary Essential Oil
  • Strainer

Directions

1. Put seed in a stainless saucepan.

2. Pour water over & bring to a boil.

3. Reduce to a simmer & simmer for 20 minutes.

4. Cool & strain.

5. Add essential oil. Keep in fridge rub into scalp for help with hair follicle stimulation.FENNEL Cellulite Rub

  • 1/2 cup Fennel Seeds
  • water to make a paste

Directions

1. Grind seeds & keep in jar in fridge.

2. Take small amount & add warm water to make a paste. Scrub areas affected with cellulite & rinse with warm water.
