The Spirit of Springfield announced its plans for the 2018 World’s Largest Pancake Breakfast on Wednesday.
It’s been 31 years since the Spirit of Springfield’s first set the table. First created to celebrate the City’s May 14, 1636 founding, the pancake breakfast now attracts thousands of families to spend what’s become an iconic morning.
Spirit of Springfield Executive Director Judy Matt has scheduled this year’s pancake breakfast for the morning of Saturday, May 12th. She still can’t get over what it takes to put on the pancake breakfast.
“We serve 500 gallons of pancake mix, 800 pounds of eggs and 750 gallons of water,” said Matt.
Hampden County Sheriff Nick Cocchi will share the pancake breakfast’s honorary chair honors with Alex Dixon, MGM Springfield’s general manager.
“It is my pleasure and honor to represent MGM Springfield and serve as the honorary chair for this year’s Pancake Breakfast, and I am proud to be following in the footsteps of prior chairs of this event,” Dixon said.
Mayor Domenic Sarno said that with so many problems facing the nation and the world, we need a light hearted event like the pancake breakfast.
“It feels good and you know what, there’s nothing wrong with feeling good, especially in this day and age,” said Mayor Sarno.
And once again the Mercy Medical Center kitchen staff will whip together the vast amount of batter necessary for the many thousands of pancakes consumed the morning of May 12th.
